Many here host their sites in the US. I used to as well, but due to the fact I want to target the .co.uk search engines and also uncertainty of legislation in the US – I decided to move my hosting to the UK.
With regards whois protection, that facility is available from your domain name registrar, such as godaddy etc – Another tip, do not register your domain name with your host – this can cause problems if you experience hosting issues which make you want to move hosts.
There are a number of good UK hosts. They are though overall more expensive than their US counterparts. You also need to work out whether you want a dedicated server or host your site on a shared server.
If you are looking for a dedicated server, I can recommend coreix.net – they are expensive, but you get what you pay for and the tech support is first class. I have also never had any downtime with them.
