Hmm.. I have noticed this very same thing myself and it seems many casinos are cutting down the graphics and optimizing it for poor connections and small resolutions. Now if this optimizing didn´t work I think they wouldn´t do it, so the simple box designs must work since we all know it is not the lack of talent or resources that makes these casinos use the simpler designs.
I have many times come across the horrible looking casino sites that actually are quite big and make money, for example I cant stand the design of Slotland – my god it´s awful, it´s like something from the early days of internet, but still people play there and enjoy the games – makes me wonder 
To bring a one more issue to the mix, how about those colors? Now the most usual colors must be red and blue, now I think there´s a good reason why these colors are so much in use and the reason is they are soothing, mellow, relaxing colors that make you feel at ease and that is what we want the customer to feel like – right? Now we can go to the other end and use some beach theme with bright yellow colors, but don´t those look pretty cheap and playful? Maybe the kids like those playful colors, but I think serious gamblers dont – what say you?
