Hi Rob,
I have zero experiences with wordpress, but it sounds like hosting/server issue, I guess their server crash or something and they restore your site from weekly backups. Ask your hosting if they have better (daily?) backup, maybe you don’t need it for whole website data structure, but just your newest MySQL database.
