That’s why its good to keep a record of your links and make sure if you did reciprocals they are still there. I usally go back and check every couple of months to see has taken them down. Yes its unethical but a lot of people do it.

I am not very technical but maybe you could add a “cron job” that checks the links in question on a daily basis and in return applies FOLLOW or NoFollow to the link on your site that directs to the other webmaster…?
